Ingredients
  

  • For the Salad
  • 12 ounces rotini pasta
  • 4 cups corn kernels
  • ½ cup cotija cheese
  • ¼ cup chopped cilantro
  • 1 jalapeño finely diced (optional)
  • For the Dressing
  • ½ cup mayonnaise
  • ½ cup Greek yogurt
  • 2 tablespoons lime juice
  • 1 garlic clove minced
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • Salt to taste
  • Black pepper to taste

Method
 

  1. Step 1
  2. Cook pasta until al dente. Drain and cool.
  3. Step 2
  4. Roast or grill corn until lightly charred.

  6. Whisk together all dressing ingredients.

  8. Combine pasta, corn, cilantro, cotija cheese, and jalapeño.

  10. Pour dressing over the salad.

  12. Mix thoroughly until evenly coated.
