Ingredients
  

  • For the Salad
  • 12 ounces rotini pasta
  • 3 cups corn kernels
  • 1 red bell pepper diced
  • 1 yellow bell pepper diced
  • ½ red onion finely diced
  • ¼ cup chopped parsley
  • 2 tablespoons chopped chives
  • For the Dressing
  • ½ cup mayonnaise
  • ½ cup Greek yogurt
  • 2 tablespoons lemon juice
  • 1 tablespoon Dijon mustard
  • 1 garlic clove minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Method

  2. Cook pasta according to package instructions until al dente.

  4. Drain and rinse under cold water.

  6. Whisk together all dressing ingredients in a bowl.

  8. Combine pasta, corn, bell peppers, onion, and herbs.
